
OK, this is a nice easy one... takes about 5 minutes and tastes fantastic.
It is perfect for that Sunday morning breakfast in bed with a fresh orange juice and the newspaper. Just watch out for the crumbs!
Ingredients:
4 Large Butter Croissants
2 Tomatoes
1 Garlic Clove
8 slices Pastrami
Cheese (your choice - personally I like Pepper Jack, Gouda or Mozarella)
Preparation
Boil a kettle of water and immerse tomatoes in the hot water. Prick the skin and wait until the skin splits... then peel, de-seed and chop roughly.
Cut the croissants in half as if to make a sandwich and grill lightly. Rub the garlic over the toasted croissant then pile high with the pastrami, the tomato and the cheese. Add black pepper and fresh basil to taste. Put back under the grill until the cheese melts and serve hot.
